Fight the drizzle with food!

Mulberry Cottages have a really exciting project in the works to provide all of our cottages with easy and tasty meals to prepare whilst on holiday with us. Over the coming weeks we will be posting delicious recipes beloved by the team at Mulberry Cottages as well as a range of local Inns, Restaurants and Bars to whet your appetites…

Let Emma's recipe whisk you away into the summer haze...

Just when you thought the weather couldn’t get any worse, the rain arrives! As you all know here at Mulberry Cottages we only deal in smiles, unicorns and rainbows so we put our heads together to come up with a recipe guaranteed to banish the gloom and welcome the sun… Our best offering came from Emma, a member of our booking team, with a recipe that is delicious, easy and tastes like barbecues, Pimms and everything else that we love about summer!

 

You need:

  • 350g new potatoes, thickly sliced
  • 225g whole chorizo sausage
  • 1 red pepper
  • ½ bunch of spring onions, sliced
  • 2 tomatoes, diced

Place the potatoes in a saucepan and cover with cold water, bring to the boil and simmer for 5-6 minutes until tender and then drain.

Meanwhile, remove the skin from the chorizo and slice. Fry in a non-stick frying pan with the pepper for 2-3 minutes. Add the spring onions, tomatoes and potatoes and cook for 2-3 minutes until heated through. Serve with salad as a light lunch or supper.

A considerably easier way of enjoying Spain this March!
